From a Simple “Hola” to Something Extraordinary

Behind Café Hola’s journey is Chef Valerie, whose story is as inspiring as it is delicious. She shared how it all began back in 2019—not as a café, but as a milk tea shop with a twist. Alongside their signature milk tea floats, they introduced the now-famous “Big Chick” fried chicken. Their Silk Tea, crowned with a scoop of ice cream, quickly became a crowd favorite.

Then the pandemic struck. Like countless others, they had to close their doors. But instead of letting the dream fade, Chef Valerie and her team brought Hola into their home. They continued selling Silk Tea floats online and soon began experimenting with fresh fruit drinks like avocado and mango milk. The ever-popular Big Chick fried chicken also kept loyal customers coming back, even when everyone was stuck at home.

The “Madness” That Fueled a Dream

What started as survival soon turned into what Chef Valerie fondly calls “the madness.” From their kitchen, they created imaginative treats like Puto Bumbong-inspired Palitaw stuffed with yema and topped with coconut, cheese, and condensed milk. They also introduced their playful take on empanadas—aptly named Enayadas. Orders poured in so quickly that customers often had to wait weeks to get theirs.

As the lockdowns eased, demand for delivery dipped, but something bigger was calling. People wanted to go out, and Hola needed a home. That dream took shape at Nepo Quad, where Café Hola finally found its official space. The response was immediate, heartfelt, and overwhelming. Customers didn’t just want to visit—they wanted to bring Hola into their own neighborhoods.

More Than Just a Café

Now, a year later, Café Hola isn’t just about food—it’s about purpose. Everything is baked fresh daily in their own bakery, ensuring every loaf and pastry carries the warmth of home. The menu itself is a balance of heritage and innovation, blending traditional flavors with creative flair.

Some highlights include:

  • Ambisyosang Manok, a playful chicken dish stuffed with cranberry sauce and gravy.
  • Kangkoy, a crispy twist on the classic okoy made with kangkong.
  • Asadong Matua and Kilayin, hearty Kapampangan dishes that instantly won over regulars.

But what sets Café Hola apart is not just what’s on the plate. It’s the heart behind it all. They’ve made generosity part of their daily practice—offering 50% off an hour before closing and providing vouchers to local vendors and security guards so they can buy cakes for their children.

As Café Hola celebrates its first anniversary, Chef Valerie’s message is one of thanks. She credits the Lord’s favor, the unwavering support of suppliers, and the love of every single customer. “From day one, you have supported us, loved us, and believed in Hola,” she said.
